This CHICKEN STEW is Ethiopia’s national dish. Chicken leg stewed with onion, garlic, ginger, berbere and finished with kibbeh (Ethiopian spiced butter) and served with boiled egg and ayib (home-made cottage cheese).

Ethiopian version of steak tartare: minced prime beef, blended with kibbeh (Ethiopian spiced butter), mitmita (powdered chili peppers), and cardamom.
